Lemon Pudding – Made in Minutes!

You know that feeling where you get to the end of the day and you have had your dinner (early because you’re trying to teach your daughter that family time is meal time and you had to eat together at early o’clock) and you’re working late or slobbing watching the tv and I don’t know about you but I get a real sweet craving and it is at this point that I wish I had made pudding. So, I started thinking about quick and easy puddings that don’t require a lot of effort. I suddenly remembered that I had been seeing on a lot of cooking shows recently that chefs were cooking sponges in the microwave and this gave me an idea…

Ingredients

  • 100g caster sugarlots of lemons some whole some in half
  • 100g softened butter
  • 100g self-raising flour
  • 2 egg
  • zest 1 lemon
  • 1 tsp vanillaessence
  • 4 tbsp lemon curd
  • crème fraĂ®che or ice cream, to serve

Method

  1. Mix the sugar, butter, flour, eggs, lemon zest and vanilla together until creamy, then spoon into a medium microwave-proof baking dish. Microwave on High for 3 mins, turning halfway through cooking, until risen and set all the way through. Leave to stand for 1 min.
  2. Meanwhile, heat the lemon curd for 30 secs in the microwave and stir until smooth. Pour all over the top of the pudding and serve with a dollop of crème fraîche or scoops of ice cream

This really does taste absolutely delicious but I have also tried this by heating strawberry jam, warming honey or even some chocolate – whatever flavour I happen to have in the cupboard. All you need is a good Microwave (check out Microwaves UK by Panasonic for some great ones) and 5 minutes just to zap it all together… Delish!! What flavour are you going to make??!

  1. Oh wow. Those pre-made microwave sponges are a bit of a guilty pleasure but I hadn’t even thought of making my own. I didn’t realise it was so easy!
