Raw Tomato & Mozzarella Summer Pasta!

Now I am all about the comfort food… thick gungy  stews and hearty  soups that warm you right down to your core. However, in the summer despite wanting comfort food the type of comfort food changes, well it has to doesn’t it?! In recent days the weather has been hotter and hotter and I don’t know about you by my appetite plummets and I want something filling but light at the same time. Well, let me introduce you to this… Raw Tomato and Mozzarella Summer Pasta!

Another thing that I find really important in summer, especially on the rare occasions that it is hot, is that I don’t spend too long in the kitchen. I have far too much I want to do and let’s face it, if we go for cooking our pie, mash and veg meals then we are going to overheat pretty quickly. This recipe is great – minimal prep and ready in mere minutes…. AWESOME! This recipe is one I used to eat time and time again when I lived in Italy – so simple and yet absolutely delicious. Ingredients (serves 4)

2 Bags of fresh Spaghetti (you can of course use dried)

4 Tbsp Olive Oil

2 Punnets of Baby Tomatoes (pick your favourite type), halved

2 Packets of Mozzarella, chopped into  small chunks

15-20 Basil Leaves

Salt & Pepper

1 – Put a pan of water on to boil with 1 tbsp of olive oil in it and a pinch of salt. When the water comes to the boil cook the pasta according to the pack instructions.

2 – Meanwhile, put the mozzarella chunks on a tray and pop in the freezer for 10 minutes whilst the pasta is cooking.

3 – In a big mixing bowl, chuck in the tomato halves and basil. Drain the pasta when cooked and chuck that in as well with the remaining olive oil, salt and pepper then pop in the chilled mozzarella chunks too and give it a big mix – then serve and if you like add some crusty ciabatta bread on the side too! DELICIOUS!

    There’s not a lot nicer than really fresh tomatoes sliced with mozzarella and top notch olive oil. Bit of salt and pepper mmm. My only tip is tomatoes should be room temperature. Chuck in pasta and it’s a whole dinner too 🙂 #foodiefriday
