Those of you that pop by my blog regularly will know that I love to cook and bake – which is a good thing considering I post a recipe a week ( take a look “”In my Kitchen”) and co-host the #FoodieFriday linky too. Imagine my delight when Butterkist asked if we’d take up their “Beat the Bake Off” challenge and create a recipe using some of their delicious popcorn as one of the ingredients…. well of course we will! Apart from loving a good challenge, we’re great popcorn lovers and couldn’t wait to get creative and “pop” your socks of with our creation….
We thought the best way to show you how we got on was capture the whole experience on film… mummy and daughter baking time . Chef’s hats and aprons on, wooden spoons at the ready and melted chocolate on the menu…. this was always going to be interesting wasn’t it!
We really hope you enjoyed sharing our Beat the Bake Off Challenge – how good did the Pop-Choc Fridge cake look?! Let me tell you it tasted amazing too and what I love is that you can mix and match what you put in to suit your family’s tastes (who am I kidding… your tastes!!) Here comes that all important recipe so you can recreate this yourself…
Ingredients
250g digestive biscuits
150g milk chocolate
150g dark chocolate
100g unsalted butter
150g golden syrup
80g dried cranberries
75g raisins
80g Popcorn – pick your favourite flavour
Method
Use cling film to line a 20cm (8in) shallow, square-shaped tin. Leave extra cling film hanging over the sides.
Bash the biscuits into pieces using a rolling pin. (Put them in a plastic bag first so they don’t go everywhere!)
Melt chocolate, butter and golden syrup in a heatproof bowl set over a pan of simmering water. Stir occasionally.
Remove the bowl from the heat and stir in the broken biscuits, apricots, raisins and pecans (optional).
Spoon the mixture into the tin. Level the surface by pressing it down with a potato masher.
Leave to cool, then put the chocolate mixture in the fridge for 1-2 hours to set.
Turn out the cake and peel off the cling film. Cut the cake into 12 squares and enjoy!

I love those digestive biscuits. I try not to buy them because I can’t stop eating a minimum of 3 at a time!! This recipe looks so simple. I wonder if we get toffee popcorn here in the US. We aren’t big fans of cranberries. Hmm..wonder if I can substitute it with something else. Cool recipe #foodfriday
