Let’s face it – being on a diet can really suck. We’re denying ourselves the things we really want to eat and it can be a real mind game. I have pretty much been on a diet for as long as I can remember and obviously haven’t quite cracked it yet as I kept getting distracted by all the yummy things that I simply don’t want to look at the calories but instead scoff until I am full. The trick for me I’ve found is not to deprive myself but have things in moderation. I follow the old version of Slimming World because it is what fits in best for my life and for being a vegetarian. I am fine with having a freddo for 5 syns as a treat, or a gin and tonic but my mum has real trouble whether she’s on a diet or not.  She is a vegetarian who suffers with IBS meaning she is a gluten and lactose free vegetarian…yeah. So when I spotted a recipe by The Slimming Foodie for ‘Ferrero Rocher’ I thought I could definitely adapt this so that my lovely mum could eat them. So here is my  gluten free, lactose free, soya free,  slimming low fodmap “Ferrero Rocher” recipe…

Equipment for Low Fodmap Ferrero Rocher Recipe:

Saucepan & Glass Bowl / Microwave (for melting chocolate)

Food Blender

Baking tray

Baking paper

Tbsp Measure

Wooden Spoon

Sweet paper packets (optional for decorative purposes)

Ingredients for Low Fodmap Ferrero Rocher Recipe (makes 15):

150g Dark Chocolate (70% +) – 7 syns per 25g = 42 syns

6 Nutribix blocks – 3 blocks = 1 x HeB

4 Tbsp Maple Syrup – 1.5 syns per tbsp = 4.5 syns

46.5 syns – Makes 15 = 3 syns per “ferrero rocher”

Method:

  1. Melt the chocolate either in a glass bowl over a saucepan with boiling water or in the microwave. If you’ve chosen the microwave be sure to do it in 10-15 second bursts to avoid burning the chocolate.
  2. In a blender, put all 6 nutribix blocks and blitz down into crumbs.
  3. Add in the maple syrup and melted chocolate and blitz again to combine the mixture fully.
  4. Using a tbsp measuring spoon, separate the mixture and roll each portion into balls and place on the baking tray with baking parchment on.
  5. Pop in the fridge for an hour to set, then either pop in the sweet wrappers to display or pop them in your mouth to enjoy!
