Roast Vegetable & Houmous Pie!

We as a family decided we wanted to try something different this week as we seemed to be getting in a rutt of eating the same things week in week out. So I headed over to Delicious Magazine which is one of my go to places for recipes - they have such a great selection and came across "Roasted Vegetable and Houmous Pie!" It included a lot of ingredients I really enjoy eating and didn't appear to be too fiddly to do either. Plus I had some Gluten Free pastry to use as well which decided it for me...

Nicely chopped chunky veg...

Tossed in a tray with olive oil and cumin and roasted...

Thin layered slices of sweet potato on puff pastry...

Roasted veg mixed with Houmous, Lemon Zest & Coriander on top...

Seal, egg wash and bake...

Serve with a crisp green salad...
Overall, I enjoyed the recipe as like I said it was something different. If making again for my family's tastes, we would lower the amount of cumin and lemon zest and probably double the houmous to provide a bit more moisture. However, the flavours were there... we just wanted to re-balance them for our own personal tastes!
