Okay, so when you think veggie burger what is the first thing that comes to mind? Well, a lot of the time it’s some half-assed attempt at throwing some chopped carrot and sweetcorn together with a bit of potato and not enough seasoning, wrapping it in breadcrumbs and bobs your uncle the most amazing veggie burger ever… NOT! Mcdonalds idea of a “veggie deluxe” is this exact burger with a piece and I mean 1 piece of lettuce and a spoon of mayonnaise in a bun. Ummm so vegetarians don’t get toppings like cheese, pickles, tomatoes or heaven forbid a bit of BBQ sauce?! Nope apparently that might affect our rabbit food lifestyle. Anyway moving swiftly on that is so not what this burger is. It is also
not what normally constitutes a mushroom burger where a giant mushroom is cooked and whacked between a bun. This is a proper, big bite into, juicy burger. Not only that but it has blue cheese and caramalised onions on top of it! Excuse me while I go drool a second…
Okay, so I wish I could take credit it for this amazing recipe…. but I can’t. The recipe for these awesome burgers comes from Saveur which are a Food, Travel & Adventure magazine based in New York and available both online and in print versions. Â I know that I keep saying that they are good, but they are just sooooo good. I have never found an at home recipe that when made actually comes out like a “real” burger.Â
The burger itself had a strong mushroom taste and were nice and juicy. The cheese was just simply cheese but I mean it’s cheese which is just awesome generally and the onions were gorgeous because they had thyme added in to the caramalisation process which gave a slightly different flavour that I enjoyed. We chose to team this ultimate burger up with some sweet potato fries, and a fresh green salad, finished with a drizzle of olive oil.
This has been my absolute favourite meal all week! If you are counting calories, this burger is not actually that bad at all. To make it even better, you could always swap out the blue cheese for some half fat melted mozzarella instead which would be oh so good too – or simply save up your points or syns and indulge in the blue cheese for a cheeky little treat!
