Ginger Biscuits: My Autumn Faves!

Being a mummy and a blogger and a human being I love a big mug of coffee… in fact at times I do wonder if it’s what is keeping me awake and functioning and nothing goes better with a cup of coffee in the morning than a biscuit or three…five…two I mean two. I love a whole host of biscuits from custard creams to malted milks with the cow on them that I always used to get from my nanny. However, my mum adores anything with ginger in and so recently, I thought I’d knock together some ginger biscuits which are perfect for Autumn as they seem to warm you from the inside but are not fiery hot like some can be…

Ingredients

  • 220g margarine, plus extra for greasing
  • 220g caster sugar
  • 220g  golden syrup
  • 450g self-raising flour, plus extra for dusting
  • 6 tsp ground ginger

There you have it folks – these should have a nice little snap to them making them perfect for dunking!! So go put the kettle on and I’ll be round in a few mins…

  7. These sound good and also quite easy. I like the way you’ve pointed out that you need to cool them otherwise you might think they need more flour. I’d be the one frantically adding more flour! #foodiefriday
