My child is a bit of a weird one in many ways but the thing that really gets me? She’s not a huge fan of chocolate! Now, I love me a bit of chocolate as my waistline will confirm but little madam likes the odd bit of white chocolate but is really not fussed.  She has a major sweet tooth don’t get me wrong, but chocolate she can take it or leave it. However, she does really like Easter, the whole holiday and does get really involved so I do need to fulfil my Easter Bunny duties. I do get her a little bit of chocolate but don’t want to force it upon her and would rather get her something useful or that she’d enjoy. So here is my alternative gift guide for Easter…

Carrot Muffins:  Makes 12 muffins

Ingredients:

150g butterflour spilling onto wood from a kilnerjar

250g grated carrot

50g dried mixed fruit

150g sugar

200g self-raising four

1 tsp of baking powder

2 eggs, beaten

1tsp of cinnamon

1/2 tsp of ground allspice

Cream cheese icing 

150g butter

3tbsp of caster sugar

240g cream cheese

Method:

  1. Pre heat the oven to 200 degrees and line a muffin tin with paper cases
  2. Cream the sugar and butter together and add the carrots.
  3. Sift in the flour, spices and baking powder into the mixture.
  4. Add the beaten eggs and flour and mix until it is all combined.
  5. Divide between the paper cases and bake for 20 mins.
  6. While the muffins are baking you can make the icing by simply mixing the butter and sugar together and folding in the cream cheese.
  7. Pop the icing into the fridge and then spread or pipe onto the muffins when they are completely cooled.
