As I have mentioned quite a lot lately, I am trying once again to diet and hit the pounds on the head once and for all. A huge part of this for me is often time – whether we like it or not healthy food requires effort. You have to THINK about it.Yes there are healthy ready meals out there but have you ever noticed how many of them are suitable for vegetarians? I’ll give you a hint – I can count the number on one hand meaning I either eat tomato penne pasta every night for the rest of my life or I have to put effort in and actually make stuff. This is all very well when I have time and I have thought ahead but not only am I a dieter but I am a mum and I work from home too and sometimes I just don’t have the time or the head space to think that far ahead and it gets to a meal time, particularly lunch and I’m like… ahhh crap, what am I going to do now. Well, Mr. Lee’s has given me a solution for something quick, easy and different for my meals…

Introducing the new “no nasties” lunch in town courtesy of Mr. Lee’s Rice Noodles. It’s crazy that convenience foods are still limited to crisps, chocolate, sandwiches and sausage rolls. Okay, we know there are healthier options, but no one ever said: “I’m dying for a celery stick.”

Time for something tastier and healthier – especially for time poor people – that you can eat on the go: Mr Lee’s Noodles.

Available  in six different flavours these award winning noodles are not only low in sugar, salt and calories but are also gluten free! The lovely people over at Mr. Lee’s sent me the two vegetarian flavours to try and I was keen to get stuck in for a new and tasty lunch. I am a bit of a wimp when it comes to heat in my food so went for the Shaolin Monk Vegetables first. I was amazed by how much was in a pot and found them very filling. The flavour in this pot is quite mild but definitely there. I added a teaspoon of low sodium soy and it boosted all the flavours and I found it delicious and satisfying.

Despite my aversion to heat in food, I felt like I needed to give the Dragon Fire Mushroom (with the 3 chilli heat indication!!!!) a chance. Actually, the heat was not too overwhelming and it definitely added to the intensity of the flavour and I didn’t add any soy sauce to this one at all. I  used to love Pot Noodles but with all the nasties and me doing the whole healthy thing I am so pleased to be able to eat a no nasties version of them as a quick and easy lunch that I don’t have to worry  is then going to show up at a later date on the scales – winn
